General comment | Ammonium bicarbonate is an inorganic compound with the formula (NH 4)HCO 3. It is the bicarbonate salt of the ammonium ion and is a colourless solid that degrades readily to carbon dioxide, water and ammonia. It is an important raising agent for the biscuit and cracker industry and is also used in some strongly flavored products like gingerbread. It decomposes on heating at 60°C, releasing carbon dioxide, ammonia, and water vapor. |
